Description
Taittinger reserve the Comtes de Champagne name for their prestige cuvées, and the vintage rosé is built around Pinot Noir with Chardonnay, taking colour and red fruit weight from a measured share of still red wine from the Montagne de Reims. The wine is made by the traditional method, with a second fermentation in bottle followed by long ageing on the lees in the house chalk cellars beneath Reims. That slow maturation, over many years for a bottling of this rank, folds a fine toast and pastry layer into the fruit. The Brut dosage keeps it precise.
The wine is a bright, pale rosé with a fine and persistent bead. Raspberry, strawberry and redcurrant lead the nose, with pomegranate, light florals and a toasty, creamy undertone. The palate is structured and taut, with red fruit over a biscuity base and a long, dry finish. Serve at 9 to 11 degrees in a white wine glass. A wine for the table as much as the toast, suited to game birds, duck and fine poultry.
