Description
Folies de la Marquetterie is Taittinger's single vineyard cuvée, sourced from the estate that surrounds the house's historic château. It leans on Pinot Noir with a good share of Chardonnay, and a portion of the wine is vinified in oak, which sets it apart from the rest of the range. The wine is made by the traditional method, with a second fermentation in bottle and extended lees ageing that, together with the oak, gives a fuller and more toasted profile.
The colour is bright gold with a fine mousse. The nose shows baked apple and white peach with vanilla, toasted bread and a nutty, creamy depth from the barrel work. On the palate it is dry and rounded, with more weight than a standard Brut and a long, warm finish. Serve chilled at 9 to 11 degrees in a tulip glass. Its extra richness suits the table, working with white fish in a sauce, roast poultry and mature hard cheeses as readily as it does the aperitif hour.
