Description
Taittinger give their house Brut a notably high share of Chardonnay, which sets the fresh, elegant tone the house is known for, filled out with Pinot Noir and Pinot Meunier for body and fruit. The wine is made by the traditional method, with a second fermentation in bottle and several years on the lees in the chalk cellars beneath the Butte Saint Nicaise in Reims. That maturation gives the biscuit and brioche layer under the fruit. A Brut dosage keeps the style dry and balanced.
The wine is a bright gold with a fine, persistent bead. Apple, pear and white peach lead the nose, with white flowers, a light toasty note and a citrus edge. The palate is fresh and elegant, with orchard fruit over a biscuity base, closing clean and dry. Serve at 8 to 10 degrees in a white wine glass. A refined aperitif that also handles shellfish, white fish and hard cheeses.
