Description
Champagne Taittinger conceived Nocturne as a gentler, evening style, finished as a Sec with a fuller dosage than the house Brut. The blend follows the traditional three grapes, with Taittinger's usual generous share of Chardonnay for freshness against the added sweetness. The wine is made by the traditional method and spends several years on its lees, which builds the creamy, lightly toasted character that balances the softer finish.
The colour is bright gold with a fine, active mousse. The nose shows ripe apple, white peach and apricot alongside honey and a hint of vanilla. On the palate the extra dosage reads as a rounded, gently sweet middle, kept in check by fresh acidity and a biscuit note into the finish. Serve chilled at 8 to 10 degrees in a tulip glass. It suits an aperitif for those who prefer a softer style, and works with fruit desserts, lighter poultry and delicate pastries.
