Description
Cantine Scolari was founded in 1929 in the Valtènesi on the western shore of Lake Garda, though this Prosecco carries the Treviso DOC and is made entirely from Glera, the grape of the region. The fruit is hand picked in late September and gently pressed, then fermented in temperature controlled steel tanks. The sparkle comes from the tank method, which suits Prosecco by preserving the grape's fresh, primary aromatics rather than building autolytic depth. The Extra Dry finish leaves a touch more sweetness than a Brut.
The colour is straw yellow with a fine perlage. The nose is delicate and fruity, with pear and apple alongside acacia blossom and a hint of mountain honey. On the palate it is soft and fresh, a gentle sweetness balanced by harmonious acidity, with a long and elegant finish. Serve well chilled at 7 degrees in a white wine glass. It makes an easy aperitif and suits light fish dishes, pasta and risotto, or a plate of greens.
