Description
Cantine Scolari works from the Valtènesi on the western shore of Lake Garda, and this Munià Cuvée is its house Spumante, made in a white winemaking style. Fermentation runs at a controlled sixteen degrees with selected yeasts, after which the wine is chilled to four below zero and filtered, then taken through a second fermentation in a pressurised tank using the isobaric method. This tank approach keeps the fruit fresh and the mousse lively rather than building bready complexity.
The colour is a delicate straw yellow with a fine bead. The nose is fruity and finely aromatic, with apple, pear and a citrus edge over a soft floral note. On the palate it is lively and balanced, an Extra Dry style with a subtle acidity holding a clean, long and dry finish. Serve well chilled at 4 to 6 degrees in a white wine glass. It makes a refreshing aperitif and suits light fish dishes, seafood and green salads.
