Description
The Scolari Bollicine I-KONIC is a Spumante Brut made in Lombardy in northern Italy, where the producer sources fruit from mineral rich soils that give the wine its freshness and structure. It is matured in stainless steel tanks by the Charmat method, taking its second fermentation under pressure in tank, which gives a lively perlage and keeps the aromatics precise and primary rather than bready. The Brut finish leaves the wine dry and clean.
The colour is a light straw yellow with pearly reflections and a fine, long lasting bead. The nose shows citrus fruit, green apple and pale orchard fruit with a floral edge. On the palate it is lively, fresh and precise, with a fine minerality and balanced acidity, the creamy mousse carrying the fruit to a clear, lengthy finish. Serve well chilled at 10 to 12 degrees in a white wine glass. It makes a fresh aperitif and suits seafood, marinated fish, oysters and salmon carpaccio.
