Description
Scolari makes this Moscato Spumante in the aromatic sweet style, built around Moscato Bianco, the grape behind Asti and its perfumed, grapey character. Fermentation is halted in stainless steel to retain natural sweetness and low alcohol while preserving the primary floral aromatics, the same principle behind classic Asti. At 9.5 per cent it is light and easy, the sweetness balanced by fresh acidity so it stays lifted rather than cloying. There is no lees ageing or oak; the whole point is fragrance, freshness and a soft, fine bead.
The colour is a light straw with a fine, lively bead. The nose is intensely muscat, with peach, honeysuckle, elderflower and rose. The palate is sweet, fruity and harmonious, a soft texture set against energising freshness, the finish light and persistent. Serve well chilled at 6 to 8 degrees in a white wine glass or flute. It works with fruit desserts, light cakes and fine pastries, and can be poured as a sweet aperitif or on its own.
