Description
Distiller's Choice is the 7 Years Old expression in the Pearse range from Pearse Lyons, the Dublin distillery housed in the former church of St James in the Liberties. Carrying an age beyond the young distillery's own early stock, the blend rests on well aged sourced Irish whiskey, married and finished under the house's direction and bottled for the European market.
Maturation splits between ex-bourbon barrels and Oloroso sherry butts, and both speak clearly. Vanilla and fresh orchard fruit from the American oak sit beneath dried fruit, cooked apple and a sherried richness, with a dry note of hay at the edges. Bottled at 43%, it is the most cask layered of the core Pearse blends.
