Founder's Choice sits at the top of the Pearse range, a 12 Years Old single malt bottled by Pearse Lyons in Dublin in honour of the Alltech founder who restored the church of St James as a distillery and died in 2018. Whiskey of this age predates the James's Street stills, so this is mature sourced Irish malt, chosen to carry the founder's name.
Twelve years in ex-bourbon barrels bring honey, stewed orchard fruit and a fragrant, faintly herbal depth over rich malt extract, the oak rounded and mellow rather than loud. Bottled at 43% for the European market, it drinks exactly as the house intends, a soft, mature Dublin tribute.
