Description
This is the Pearse 5 Years Old single malt bottled undiluted, a cask strength edition of 1,000 bottles released in 2018 for the Irish market by Pearse Lyons, the Dublin distillery beneath the glass spire of the former St James church. Same age, same casks, none of the water.
Refill bourbon casks keep the oak restrained, so at 59.3% the spirit itself surges forward, malt loaf, husky barley and honey heightened by peppery alcohol heat, with vanilla and a hint of green apple underneath. A drop of water opens the cereal sweetness considerably. It shows the house malt at full voice.
