Signatory Vintage, the Edinburgh independent founded in 1988, drew this 9 Year Old: a 1988 vintage from cask 2626, an outturn of 962 bottles. Mortlach's heavy, savoury style comes from worm-tub condensing and a part-triple distillation through the Wee Witchie, unchanged since 1897.

Across nine years the Oloroso butt loaded the heavy spirit with date, raisin and a nutty edge, weight and sherry meeting head on.

At 43% it shows fig, date, leather and dark chocolate over the oily Mortlach weight. The savoury Dufftown style.
