    Gordon & MacPhail of Elgin, whose deep stocks include some of the oldest Mortlach in existence, selected this 31 Year Old, a 1987 vintage from cask 425, an outturn of 200 bottles. Mortlach's heavy, savoury style comes from worm-tub condensing and a part-triple distillation through the Wee Witchie, unchanged since 1897.

    Thirty-one years in Oloroso drew the rich, meaty spirit to a profound depth, long oxidation and heavy evaporation over figgy dried fruit, leather and old wood.

    At 54% it shows chocolate, dried fruit, leather, a nutty depth and citrus, undiluted. A Beast of Dufftown.
