Signatory Vintage, the Edinburgh independent founded in 1988, selected this 11 Year Old: a 2010 vintage from cask 20, an outturn of 492 bottles. Mortlach, the first licensed distillery in Dufftown, runs a 2.81-times distillation and worm-tub condensers that give the heavy, meaty spirit fans call the Beast of Dufftown.

Across eleven years the Oloroso butt loaded the heavy spirit with date, raisin and a nutty edge, weight and sherry meeting head on.

At 58.2% it shows old wood, undiluted. A Beast of Dufftown.
