Description
Mezcal Salvadores Espadin is a joven mezcal made traditionally in Tlacolula de Matamoros, Oaxaca, by Flavio Perez Mendez and his family. Espadin, Agave angustifolia, is the cultivated workhorse of Oaxaca and gives the balanced, approachable profile that anchors the central valleys style. The family traces mezcal making to the early 1900s under great grandfather Tomas Hernandez, revived the tradition under grandson Sal Hernandez, and built the Casa Palacios distillery in 2019, registering the brand in 2020.
The agave is cooked in a conical earth pit, crushed with a tahona stone drawn by a horse and double distilled in copper. That underground roast brings a light smoke, while the cooked agave reads sweet with caramel and a hint of citrus and flowers on the nose. The palate stays close to cooked and smoked agave with citrus running through, an honest central valleys espadin bottled at drinking strength.
