Description
A flavoured joven mezcal from the Cirial agave, a tall form of Agave karwinskii. It comes from Mezcal Salvadores, the Perez Mendez family brand at Casa Palacios Destileria in Tlacolula de Matamoros, Oaxaca, whose mezcal tradition reaches back to the early twentieth century and was formally registered in 2020. The distillery was built in 2019 on several generations of family knowledge.
This is made like a pechuga but cannot use that name, because no animal product is involved, so it is labelled destilado con, meaning distilled with. During the second distillation natural chilli flavours from morita, ancho, arbol and guajillo are added along with tamarind. The base is a karwinskii mezcal, dry, herbal and mineral, lifted here by the sweet, tangy pull of tamarind and the warm, dried spice of the chillies, bottled at 44.8% in the Oaxacan tradition of fruit and chilli destilados.
