Description
Luc Belaire Rare Rosé is a French rosé sparkling wine from Provence in south-east France, and this Fantome Edition presents it in a glow-in-the-dark bottle for the late-night setting the brand is known for. It is built from the classic Provencal trio of Grenache, Cinsault and Syrah, each grape adding richness, elegance or colour to the blend. After a first fermentation in stainless steel that keeps the fresh fruit, it goes through a second fermentation by the tank method for its bead, and takes a dosage led by Syrah that gives a soft, finely integrated sweetness.
The colour is a bright raspberry pink with a fine, long bead. The nose is fruity and floral, with ripe strawberry, raspberry and cherry and a lift of red rose. The palate is creamy and soft, balancing fresh fruit and a gentle sweetness, closing long on red berries with a hint of spice. Serve it well chilled in a white wine glass. It suits light Mediterranean dishes, sushi and fresh seafood, grilled vegetables and summer salads, and its red fruit also carries cold poultry, pork and desserts made with red fruit.
