Description
Kopke was founded in 1638 and is the Oldest Port house of all, best known for its Colheita and Tawny wines but equally at home with White Port. This Fine White is made from white Douro grapes fermented in temperature-controlled stainless steel until the desired sweetness is reached, at which point grape spirit is added to fortify and stop fermentation.
The blend draws on wines from different harvests, matured in a mix of stainless steel and wood for a minimum of three years. That approach keeps the fruit fresh and the colour a bright greenish-yellow, while the time in cask rounds the texture and adds a light nutty edge without turning the wine oxidative.
Aromas lead with fresh citrus lifted by honey, almond and a touch of spice. The palate is smooth and delicately sweet with lively acidity and a clean, faintly mineral finish. Serve it well chilled as an aperitif, long over ice with tonic and mint, or alongside salted nuts and lighter cheeses.
