Kopke FINE RUBY Porto

This Fine Ruby comes from Kopke, the Douro house founded in 1638 and the Oldest name in Port. Red Douro grapes are fermented and fortified with grape spirit mid-fermentation, which halts the process and locks in sweetness while retaining the deep colour and fresh fruit of young wine.

Unlike Tawny, Ruby is aged reductively, in tank or large vessels that limit contact with air, so the wine keeps its vivid purple-red colour and bright primary fruit. The goal is to preserve the liveliness of young fruit rather than let oxidation soften it, giving a wine that is firm and powerful in the glass.

Aromas open on dark red berry and blackberry, and the palate is full and smooth, coating the mouth with fresh-fruit flavour, gentle acidity and soft tannins that build as you taste. Serve it at cool room temperature with dark chocolate or blue cheese, or use it as the backbone of a Port cocktail.
