The 16 Years Old sits at the top of the Knappogue Castle Twin Wood pairing, a bonder label built here on Bushmills single malt from Co. Antrim. Released in 2014 as an edition of 3,000 bottles for the Belgian market, it carries a full sixteen years of maturation from the world's oldest licensed distillery.
The whiskey rests principally in bourbon barrels before a finishing period in Oloroso sherry casks, so honey, vanilla and green apple from the American oak pick up raisin and walnut from the sherry wood. At 40% it stays light on its feet, in the smooth, fruity register that triple distillation gives the Bushmills spirit.
