Knappogue Castle is a bonder style label named for a fifteenth century castle in Co. Clare, best known for bottling well aged Irish single malts sourced from named distilleries. This 12 Years Old, bottled in 2018 for the Polish market, is drawn from malt distilled at Bushmills in Co. Antrim, triple distilled and unpeated in the house manner.
Twelve years in ex-bourbon casks builds a classic American oak profile: honey, vanilla and malt extract at the core, with toasted nut, milk chocolate and a flick of new wood spice around the edges. Bottled at 43%, slightly above standard strength, it presents the elegant Bushmills distillate under an independent flag, a pairing of bonder tradition and single site provenance that runs right through Irish whiskey history.
