Kilchoman Poland

This Kilchoman Poland is a Small Batch No. 2 for the Polish market, vatted from Sauternes, ex-Bourbon and Oloroso casks. An outturn of 1,260 bottles. Kilchoman, founded by Anthony Wills in 2005, was the first new distillery on Islay in over 124 years.

The distillery malts its own barley and bottles on the farm. Matured across Sauternes, ex-Bourbon and Oloroso casks, the Sauternes brings a honeyed sweetness to the mix.

Bottled at 49.3%. The Sauternes gives honeyed apricot, the ex-Bourbon vanilla, the Oloroso dried fruit, while peat phenols carry the smoke. The recorded notes run to citrus, fresh fruit, honey, fresh oak, a nutty note and seasoned oak. A multi-cask small batch for Poland.
