Kilchoman Fino Sherry Matured

This Fino Sherry Matured is a 5 year old matured in Fino sherry casks. A wide release of 15,650 bottles. Kilchoman opened in 2005 as the first new Islay distillery in over a century, and is the island's only farm distillery.

Malting, distilling and bottling all happen on the farm, the barley to bottle way. Matured in Fino casks, the driest of the sherry styles, the wood adds a nutty, saline edge to the young peated spirit.

Bottled at 50%. The Fino gives a dry, nutty, saline note while peat phenols carry the smoke. The recorded notes run to chocolate, a coal-gas edge, smoke, fresh fruit, dried hay and cooked fruit. A Fino-matured farm malt.
