Kilchoman Fino Sherry Matured 2014, 2016 2014

This Fino Sherry Matured is a vatting of 2014 and 2016 spirit matured in Fino casks. An outturn of 10,500 bottles. Kilchoman opened in 2005 as the first new Islay distillery in over a century, and is the island's only farm distillery.

The distillery malts on site and bottles on the farm, keeping the whole process in one place. Matured in Fino casks, the driest of the sherry styles, the wood adds a nutty, saline edge.

Bottled at 46%. The Fino gives a dry, nutty, saline note while peat phenols carry the smoke. The recorded notes run to smoke, a nutty note, citrus, a kippered maritime edge, leather and dried fruit. A Fino-matured farm malt.
