Kanosuke 2021 Second Edition is a cask strength single malt from Kanosuke, the coastal Kagoshima distillery of shochu producer Komasa, bottled in 2021 at 3 years of age for the Japanese market. It follows the First Edition released the same year and takes a notably different direction in cask selection.
The vatting draws on Ex-Bourbon casks finished in Oloroso sherry combined with re-charred and wine casks, a mix that produces the chocolate note recorded in the profile alongside spiced dried fruit and the darker, more complex character that re-charring adds. The re-charred wood contributes additional caramel and gentle smoke while the sherry finish adds dried fruit richness, together framing the distillery's light fruity spirit in a broader, more layered way than the First Edition's primary oak approach. At 57% cask strength the combination delivers full concentration.
