    An 11 year old Daftmill from the distillery, at 46%. A light, floral Lowland malt of grass, citrus and honey. A cult Lowland distillery, its small releases keenly sought after. Barley is grown on the farm itself, a true field to bottle malt. Water comes from a private well on the farm at Cupar in Fife. This is the patient farm malt of Fife.

    This official Daftmill, an 11 year old, from 2008, cask 40,46,57,59,61,63,64, at 46%, 1780 bottles in all. Daftmill was founded in 2005 by the Cuthbert brothers on their working farm near Cupar in Fife. Maturation is mostly in ex-Bourbon casks, with a little sherry, in a dunnage warehouse on the farm.

    Drawn off the onion shaped stills of the Fife farm, for a light, floral make of real finesse. It was matured in refill ex-Bourbon oak, vanilla and a soft honey behind the grassy spirit. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the delicate body fuller and softer. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit. Refill oak lets the delicate Daftmill character lead, lemon and green apple beneath. Each release is small and quickly allocated, prized by collectors of the new wave of Scotch.

    Reduced to 46%, it is mellow. A delicate, fruity sweetness, with a soft vanilla from the oak. It is delicate and fruity, the elegant spirit shining through. Apple, honey and a soft oak see out the finish. This is an elegant, grassy Lowland malt of real finesse.
