Description
A 14 year old Daftmill, a distillery bottling, from 2011, cask 101/2011, at 58.9%, 300 bottles in all. Daftmill was founded in 2005 by the Cuthbert brothers on their working farm near Cupar in Fife. Barley is grown on the farm itself, malted nearby, in a true field to bottle approach.
The spirit was run through the distillery's small copper stills, giving the delicate, floral Lowland spirit. Ex-Sherry wood added a dried fruit richness to the elegant spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Refill oak lets the delicate Daftmill character lead, lemon and green apple beneath. The farm's own barley and a slow distillation give a clean, elegant spirit. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills.
At a hearty 58.9% it carries real weight. A delicate, fruity sweetness, with dried fruit, fig and walnut from the cask. A grassy citrus and a soft oak give it lift. The close is clean, fruit over a gentle oak. This is Daftmill's delicate, floral Lowland style.
