    A 14 year old Daftmill, a distillery bottling, from 2006, cask 035/2006, at 56.4%, 216 bottles in all. Daftmill, on a Fife farm, makes one of the smallest outputs of any distillery in Scotland. It is one of the smallest distilleries in Scotland, with a tiny annual output.

    Run through the distillery's small copper stills, for the light, elegant make Daftmill is known for. It rested in ex-Bourbon oak, the wood adding a light honeyed vanilla. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. The farm's own barley and a slow distillation give a clean, elegant spirit. Each release is small and quickly allocated, prized by collectors of the new wave of Scotch. Daftmill's restraint and patience are reckoned a model of the modern Lowland style. Barley is grown on the farm itself, malted nearby, in a true field to bottle approach.

    At cask strength 56.4% it is full bodied. A clean, grassy citrus, with a soft vanilla from the oak. Beneath it run lemon, green apple and a soft honey. It finishes light, fresh and floral. This is the light, elegant farm malt of Daftmill.
