Description
This official Daftmill, a 14 year old, from 2006, cask 043/2006, at 54.8%, 222 bottles in all. Daftmill is an elegant, restrained Lowland single malt of real finesse. The light, elegant make is a model of the classic Lowland style.
It was drawn off the onion shaped stills of the Fife farm, for a light, floral make of real finesse. First fill bourbon gave a fuller vanilla over the delicate spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. The farm's own barley and a slow distillation give a clean, elegant spirit. The farm steading dates to the 18th century, the distillery built quietly into its old buildings. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling. Active wood frames the fruit without overwhelming the delicate, grassy spirit. Maturation in the gentle Fife climate keeps the spirit fresh and floral.
At a hearty 54.8% it carries real weight. A clean, grassy citrus, with a soft vanilla from the oak. Beneath it run lemon, green apple and a soft honey. The close is clean, fruit over a gentle oak. This is the light, elegant farm malt of Daftmill.
