Description
This official Daftmill, an 11 year old, from 2009, cask 029/2009, at 61.1%, 629 bottles in all. Daftmill is a light, floral Lowland single malt made from the farm's own barley. Each release is small and quickly allocated, prized by collectors of the new wave of Scotch.
The spirit was run through the distillery's small copper stills, for a light, floral make of real finesse. Maturation in an Oloroso cask laid dried fruit over the light, fruity malt. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper green apple and pear. The cool Lowland air gives a slow, even maturation in the farm dunnage warehouse. Maturation is mostly in ex-Bourbon casks, with a little sherry, in a dunnage warehouse on the farm. Daftmill's restraint and patience are reckoned a model of the modern Lowland style. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit.
At its natural 61.1% it is concentrated. Lemon, green apple and a soft honey, with dried fruit, fig and walnut from the cask. Lemon, pear and a soft honey fill the middle. The finish runs delicate, grassy and fresh. This is a refined Lowland single malt from a Fife farm.
