Corralejo Añejo is a Blue Weber tequila from Hacienda de Corralejo in Pénjamo, Guanajuato, produced at NOM 1368 and so one of the few tequilas made outside Jalisco. The estate traces to a distillery founded in 1775, and this expression rests twelve months in French Limousin oak casks of up to 300 litres, which lend it its bright gold colour and bottle it at 38%.
The agave hearts are steam cooked in stone hornos at 93 degrees Celsius for 27 hours before passing through a series of eight mills to free the juice, then fermented with added yeast and twice distilled. The French oak shows as anise and marshmallow on the nose, with a little coconut, agave and a fine sweetness on the palate, closing on peppery oak. Corralejo runs at large scale with modern methods, so this reads as a polished commercial Añejo rather than a tahona showcase.
