Description
Corralejo Blanco is a Blue Weber tequila from the Hacienda de Corralejo in Pénjamo, Guanajuato, one of the few tequila houses outside Jalisco. It is a large scale Guanajuato operation, well loved in Mexico and Germany, and the brand frames this as a soft, mild blanco without additives. Production is partly industrial, with column stills used on parts of the range.
The agave hearts are steamed in stone hornos at 93°C for 27 hours and cooled for a further 12, a steam bake the house keeps to protect the agave's aromatics. The cooked agave then passes through eight successive mills to extract the full juice, with water added to reach the target sugar level before fermentation. The result is full bodied and silky, showing mint, herbs, citrus and a sweet woody spice on a base of intense agave fruit, pepper and lime. A vegetal and peppery blanco at 38% that suits cocktails as much as a neat pour.
