Copeland Distillery of Donaghadee, Co. Down assembled Merchants' Quay from Great Northern Distillery stock, a blended Irish whiskey bottled at 40% for the Irish market in 2021 while the young County Down house matures spirit of its own. It is the bonder pattern that built Irish whiskey, a northern harbour town label finishing and bottling Dundalk liquid to its own recipe.
The cask recipe is busier than the strength suggests. Virgin oak, recharred bourbon barrels and a bourbon and Oloroso pairing all feed the blend, layering fresh oak spice and nutty sherry depth over vanilla. The result is a rounded, softly nutty blend with a sweet oak driven finish, cask work standing in for age in the way of Ireland's newest labels.
