Copeland, the Donaghadee distillery in Co. Down, sources this 5 Years Old single grain from The Great Northern in Dundalk, Co. Louth for its Merchants Quay line, an honest piece of the bonder tradition with the source named. The grain moved through bourbon, Moscatel wine and Pedro Ximénez sherry casks before bottling at 46%.
Great Northern's column distilled grain gives soft toffee, banana and coconut, and the two wine casks build on that base, Moscatel adding floral grape sweetness and the PX a deeper note of fig and raisin. At 46% it stays light on its feet, gentle spice and honeyed sweetness running into a clean finish. Young Irish grain treated with more cask attention than the category usually gets, and priced to be drunk rather than kept.
