Cask #5077, distilled at Chichibu in Saitama in 2012 and bottled in 2019 for the French market via La Maison du Whisky, is finished in a combination of Ex-Bourbon and Pinot Noir casks, bringing a Burgundian wine influence to the seven-year-old spirit. Chichibu, Venture Whisky's site established by Ichiro Akuto in 2008, pursues a wide wood programme that regularly includes European wine casks.
The dual maturation gives this bottling a layer of red berry and cherry brightness from the Pinot Noir wood that sits alongside the vanilla and fresh apple contribution of Ex-Bourbon. At 62.2% from a single barrel, the spirit is bold and precise, with the wine-cask influence adding complexity without overwhelming the distillery's characteristic fruit-forward new make energy.
