Description
A Cambus single grain, selected and bottled by Berry Bros & Rudd, a 25 year old distilled in 1991, from cask 61971 and bottled at 57.1%. A release of 555 bottles. Cambus, a silent grain distillery on the River Devon, made whisky from about 1806 to 1993. Water came from the Lossburn Reservoir, the spirit drawn off two continuous Coffey stills.
Distilled continuously in two Coffey stills from a grain mash, giving a clean, mellow grain whisky. Maturation came in ex-Bourbon wood, with vanilla and crème brûlée. Past twenty five years the spirit turns oily and dessert sweet while staying clean. Grain whisky like this rewards very long maturation, the wood adding most of the character. Cambus was founded around 1806 by John Moubray on the River Devon in Clackmannanshire, one of Scotland's oldest grain distilleries. It was one of the five grain distilleries that founded the Distillers Company Limited in 1877.
At its natural 57.1% it is concentrated. The ex-Bourbon gives coconut, toffee and crème brûlée. The mouthfeel is oily, the coconut carried on a sweet body. A long, oily finish carries a coconut lift. This is a rare single grain from a lost grain distillery.
