Description
The Whisky Cask Company bottled this Cambus single grain, a 27 year old distilled in 1991, from cask 79866 and bottled at 57.6%. 286 bottles in all. Cambus was a founding distillery of DCL, making grain whisky in Clackmannanshire until it closed in 1993. John Moubray converted an old mill, switching from malt to grain stills in the 1830s.
The spirit was made in twin Coffey stills before the distillery closed, for a light, sweet make of real purity. A refill American oak cask held it, building the sweet, oily grain character. Beyond twenty five years the grain grows deep and oily, coconut, butterscotch and crème brûlée over polished oak. Light grain takes oak readily, the ex-Bourbon lending coconut and vanilla over many years. The light, sweet grain takes on a deep, oily richness over many years. The distillery stood near Alloa, in the old brewing and distilling country of the River Devon. With no new spirit since 1993, every bottle draws on a finite, dwindling stock.
Undiluted at 57.6%, it is layered. The ex-Bourbon gives coconut, vanilla and toffee. It is clean and sweet, the grain spirit shining through. A sweet, coconut led finish lingers. This is a finite single grain from Cambus, closed in 1993.
