Description
Cà dei Frati build this rosé sparkler in Trentino using the classic method, with the second fermentation taking place in the bottle exactly as it is for Champagne. Hand picked fruit is pressed gently, and the long stay on the lees after bottle fermentation adds depth and a soft yeasty character to the red fruit. The result is a fine, steady bead and a wine of real structure. The Extra Brut dosage keeps everything taut and dry, letting the fruit and the autolytic layer share the stage.
The wine is a delicate rosé with a fine, persistent perlage. Raspberry and strawberry lead the nose, lifted by a hint of citrus, light florals and a fine brioche tone. The palate is fresh and fruity with a soft texture and bright acidity, closing long with a subtle yeasty note. Serve chilled at 8 to 10 degrees in a white wine glass. Fine as an aperitif and a good match for seafood, grilled fish and lighter poultry.
