Ca dei Frati is best known for its still Lugana, and this Cuvee dei Frati is a metodo classico sparkling wine built from Turbiana, the Trebbiano di Lugana grape grown on the clay soils south of Lake Garda. Made as a bottle fermented wine rather than by tank, it undergoes its second fermentation in the sealed bottle and then a long rest on the fine lees. That autolytic ageing gives the toasted, almond edged depth and the fine, persistent bead that mark the traditional method, while the extra brut dosage keeps sugar low so the wine finishes taut and dry. The grape's natural saline, citrus character carries through.
The colour is pale straw gold with a fine, steady stream of bubbles. The nose opens with green apple, lemon and white peach over white flowers, then a toasted bread and almond depth from the lees. On the palate it is dry and mineral, a saline freshness driving the citrus fruit to a long, savoury close. Serve at 8 to 10 degrees in a white wine glass so the aromatics show. It works as an aperitif and suits shellfish, lake and sea fish and aged hard cheeses.
