Description
Cà dei Frati produce this bottle fermented white in Trentino, in the north of Italy, working from hand picked Chardonnay and Pinot Noir. The wine takes its fizz from a second fermentation in the bottle, the traditional route also used in Champagne, and time on the lees gives it a fine perlage and a layer of complexity beyond the fruit. The Extra Brut dosage keeps the style lean and precise, balanced by the natural fruit weight of the two grapes.
The wine shows a bright gold with a fine bead. The nose is led by fresh citrus and green apple, with white flowers and a subtle brioche tone behind. The palate is refreshing and balanced, with a light mineral edge and a creamy texture, closing long and elegant with a gentle bready flavour. Serve at around 10 degrees in a white wine glass. A fine aperitif that also suits oysters, lobster and delicate fish such as pikeperch or bream.
