Ca dei Frati makes this Cuvee dei Frati in the DOC Lugana zone on the southern shore of Lake Garda, using the classic bottle-fermentation method with no dosage added after disgorging. The blend is 90 per cent Turbiana, the local white grape also known as Trebbiano di Lugana, with 10 per cent Chardonnay. After the second fermentation in bottle the wine matures on the lees for at least twenty-four months, which builds creaminess, a fine texture and bread and yeast character, while the zero dosage keeps the natural freshness and purity of the fruit in full view.
The wine shows a pale straw yellow with a fine, persistent bead. The nose gives fresh yellow fruit, bread crust and yeast with delicate almond and citrus. The palate is dry, precise and elegant, with lively acidity, a saline mineral freshness and a subtle brioche note, closing clean and long. Serve well chilled at 6 to 8 degrees in a white wine glass. It suits seafood, shellfish and light fish dishes, and cuts well against mild cheeses and summer salads.
