Bollinger’s Special Cuvée is a Pinot Noir led Champagne, made by the traditional method and given long lees ageing. Brut in style, it shows orchard fruit, toasted bread and hazelnut over a fine, creamy bead.

Description
Champagne Bollinger is based at Aÿ and built its house style on Pinot Noir, generous use of reserve wines and extended cellar ageing. Special Cuvée is the non-vintage Brut, a blend across the three Champagne grapes with Pinot Noir to the fore, made by the traditional method in which the second fermentation and lees autolysis take place in bottle. A high proportion of reserve wines, some kept in magnum, and ageing on the lees well beyond the minimum build the house's depth and biscuity character. The dosage is set to Brut.
The colour is deep gold with a fine, persistent bead. The nose combines ripe apple, pear and quince with toasted bread, biscuit, hazelnut and a creamy note from the lees. The palate is full and structured, with orchard and nut character, firm acidity and a long, dry finish. Serve at 8 to 10 degrees in a white-wine glass, as an aperitif or with shellfish, roast fish and aged hard cheese.
