Description
Champagne Bollinger builds its rosé on the same Pinot Noir led Special Cuvée base, blended with a share of still red wine, some of it from the house's own old vines at Aÿ and Verzenay, to set the colour and red-fruit character. It is made by the traditional method, with the second fermentation and lees autolysis in bottle, and extended ageing on the lees adds the biscuity, creamy depth for which the house is known. The dosage is Brut.
The colour is a warm salmon pink with a fine, persistent bead. The nose leads with strawberry, raspberry and red currant, backed by toasted bread, biscuit and a creamy lees note. The palate is structured and dry, with ripe red fruit, firm acidity and a long finish. Serve at 8 to 10 degrees in a white-wine glass, as an aperitif or with poultry, salmon and lighter game.
