Description
Champagne Bollinger makes Special Cuvee in the Champagne region as its flagship non-vintage Brut, and this bottling arrives in a 007 limited-edition gift box. The house builds the wine around Pinot Noir, with Chardonnay and Pinot Meunier in support, and it is made by the traditional method with a second fermentation in bottle. A generous proportion of reserve wines and an extended stay on the lees, longer than the region requires, give the cuvee its depth, toasty character and firm structure, finished as a dry Brut.
The wine shows full gold with a fine, persistent bead. The nose is rich, moving from ripe apple and pear into toast, biscuit and hazelnut with a creamy edge. The palate is full and structured, carried by fresh acidity and a long, dry finish. Serve chilled at 8 to 10 degrees in a white wine glass rather than a narrow flute, so the aromatics can open. It makes a serious aperitif and has the weight for shellfish, richer fish dishes, roast poultry and mature hard cheese.
