Description
Champagne Bollinger works from a Pinot Noir dominant blend grown largely on Grand and Premier Cru sites around Aÿ, with Pinot Meunier and Chardonnay filling out the cuvee. This rosé is made by adding a portion of still Pinot Noir red wine before the second fermentation in bottle. That traditional method fermentation and the extended contact with the spent yeast lees build the autolytic, bready character alongside the natural red fruit. A generous share of reserve wines aged in the house's older bottle stocks adds vinous weight, and the dosage is set to a classic brut level so the wine stays dry and structured.
The colour is a soft salmon pink with a fine, steady bead. The nose carries strawberry, raspberry and red currant over toasted bread and a light creamy note, with cherry lifting the finish. On the palate it is full and firm, the red fruit balanced by a savoury, biscuit edged depth and a long dry close. Serve at 8 to 10 degrees in a white wine glass rather than a narrow flute so the aromatics show. It sits well beside charcuterie, roast poultry and richer shellfish.
