Description
Champagne Baron-Fuente makes Tradition Brut around Charly-sur-Marne in the Vallee de la Marne, from responsibly farmed vineyards. The blend is 70 per cent Meunier with 30 per cent Chardonnay, cold pressed straight after harvest and fermented in stainless steel to keep the fruit clean and fresh. It is made by the traditional method and then matures around two years in the cellars, which stabilises the bead and builds fine brioche character, finished as a dry Brut for an easy, versatile style.
The wine shows light gold with fine, lively bubbles forming a steady thread. The nose is subtle and elegant, with brioche leading over apple, pear and a hint of honey. The palate is soft, supple and balanced, with clear structure and fresh acidity, closing harmonious and long. Serve chilled at 8 to 10 degrees in a white wine glass. It makes a good aperitif and suits light starters, canapes, oysters and seafood, along with mild cheeses and fine pastries.
