Description
Champagne Baron-Fuente makes Grande Reserve Demi-Sec around Charly-sur-Marne in the Vallee de la Marne, from a blend of 60 per cent Meunier, 30 per cent Chardonnay and 10 per cent Pinot Noir. The fruit is cold pressed after harvest and fermented in stainless steel, and the wine is made by the traditional method with a three-year stay in the cellars that builds structure, creaminess and aromatic depth. What defines it is the higher Demi-Sec dosage, which rounds the palate and adds sweetness while fresh acidity keeps it in balance, so it leans towards dessert rather than the table.
The wine shows a deep golden colour with a dense, lively bead and creamy foam. The nose is soft and complex, with brioche, honey and white flowers over yellow and white fruit. The palate is smooth and round with a full body, closing finely toasty, balanced and long. Serve chilled at 8 to 10 degrees in a tulip glass. It suits patisserie, fruit tarts and cream desserts, and its gentle sweetness also plays against foie gras, mature cheese and savoury snacks.
