Description
Champagne Baron-Fuente makes Grande Reserve Brut around Charly-sur-Marne in the Vallee de la Marne, from 60 per cent Meunier, 30 per cent Chardonnay and 10 per cent Pinot Noir grown in responsibly farmed vineyards. The fruit is cold pressed straight after harvest and fermented in stainless steel to keep the fruit pure, then the wine is made by the traditional method and matures three years in the cellars. That extended lees ageing gives it complexity, finesse and a stable bead, and a Brut dosage keeps the finish dry.
The wine shows a deep golden colour with fine, lively bubbles. The nose is elegant, with white and yellow fruit lifted by floral tones and nuances of honey and brioche. The palate is full-bodied, structured and fresh, with ripe white peach and dried apricot, closing slightly toasty, balanced and long. Serve chilled at 8 to 10 degrees in a white wine glass. It makes a good aperitif and pairs with salmon tartare, baked cod and grilled red mullet, as well as seafood and mature hard cheese.
