Description
This is a single agave mezcal from Jabali, Agave convallis, a wild maguey named after the wild boar and one of the hardest species to work. Jabali foams and expands so violently during fermentation and distillation that it can leap out of the still, and its low sugar content pushes makers toward three or four distillations rather than the usual two. The result is among the more experimental and adventurous mezcals found in Oaxaca, and this one comes from La Medida.
La Medida draws together more than forty Oaxacan producers working in small batches under Julian Vidal Gomez Rodriguez, who began with mezcal over forty years ago and has worked with several established houses. Made from 100% Jabali, the spirit is distinctly wild in character, sweet and herbal with a clear floral edge. Pit roasting underpins the cooked agave, while the species itself carries the bright herbal lift that makes Jabali so prized despite its difficulty.
