La Medida Mezcal Bicuishe is a joven made from the scarce Bicuishe, one of the local forms of the Agave Karwinskii complex, harvested from wild, jungle like terrain at 1,700 metres and needing nine to ten years to mature. It is produced traditionally in Santiago Matatlan, Tlacolula, Oaxaca, for La Medida, a brand uniting more than forty six Oaxacan producers under Julian Vidal Gomez Rodriguez.
Karwinskii agaves tend to read mineral, herbal and dry, and this bottling is forceful, pleasantly spicy and herbaceous yet carries enough sweetness to keep it in balance. Pit roasted in the artesanal style and bottled unaged at 47.8 percent, it shows the green, peppery character of a wild highland maguey at full strength, with no barrel to round it.
